- 2 Tablespoons olive oil
- 1 cup chopped green onions
- 3 cloves garlic, chopped
- 1 pound baby bok choy, rinsed, larger leaves seperated from base, base chopped into bite sized pieces.
- ½ teaspoon dark sesame oil
- Salt & Pepper to taste
- Dash of low - sodium soy sauce to taste
- 1/2 cup chopped roasted salted cashews
Heat
olive oil in large sauté pan on medium/high heat. Add onions, then
garlic, then bok choy stems. Sprinkle with salt. Sauté for approximately
3 minutes. Add in bok choy leaves. Sprinkle with sesame oil. Cover and
cook for another 3 minutes or until everything is a bright green color,
tender crunchy, and leaves are slightly wilted. Lower heat to low,
stir and cook another minute or two. Gently mix in cashews and season
with soy.
